Wine and oil producers in Chianti Classico.
Our extra virgin olive oil is classified as DOP Chianti Classico, with production regulations that require specific chemical analysis and the passage of a tasting commission.
Specifically, our production focuses on the differentiated harvesting of the 3 types of olive trees Moraiolo, Frantoio and Leccino, strictly cold pressing a maximum of 12 hours after harvesting.
The oil is obtained from the blend of the three types of oils obtained from the pressing of different varieties.
Normally our pressing is done twice a day, at a maximum distance of 3 to 4 hours after harvesting.
