We are Tommaso Fiore and Giuseppe (Pippo) Allegretti; we are co-owners of “Olio Infiore”, a very small, organic certifies, Company that produces high-quality Extra Virgin Olive Oil from the “Coratina” cultivar.

We own, and manage, about five hectares of olive groves distributed in the countryside of South Italy, between the Adriatic and the Murgia plateau of Bari, in Puglia, the heel of the boot: the name of our village is Terlizzi.

The company was originally founded in 2014 as a totally family-run sole proprietorship. It develops around the “dream” of producing a very high quality extravirgin olive oil that represents the territory and the history of the Fiore family. For this reason, the choice falls on a Coratina monocultivar and a totally sustainable raw material production methodology is immediately applied (the oil, and the olives from which it derives, have organic certification), while the transformation takes place with highly mechanical methods. innovative and which meet the highest criteria of the regulation of the EVO oil specification.

In the last 2 years Pippo joined Tommaso; they share the same vision and the same dreams, so the fit is perfect!

We produce the olives that makes our Extravirgin Olive Oil. Being a very high-quality production, the volumes are very low, below 1500 Liters per year, but with a potential to reach 5000 litres if required.

As stated, we only produce 100% Coratina EVOO in three versions: the “Biologico”, with a medium fruitiness and fresh field aromas, the “Biologico Riserva”, a selection of the greenest olives in the field, with the aromas of meadow and cut grass. Starting from last Harvest, we have added a third line, the “Evo”, that is not organic certified since it is produced from the olives that grow on trees on the borders of our lands. These trees could get contaminated from neighbours; by following our spirit we have decided not to use the organic certification for the olive that comes out from them.

We personally follow the entire supply chain, from the certified organic field to the mill, where the olives are pressed within 12 hours, in a modern plant that works in the absence of oxygen. The oil is then filtered and bottled to keep all its properties unaltered.

These steps are very important for the quality of the final product. The absence of the oxygen avoids for the new oil to start an oxidation process that would affect the flavors and the scents, while the filtering step will help the oil to keep its fragrance and quality overtime, since it will remove any impurity.

The result is an Organic Extravirgin Olive Oil that represents our territory at its maximum levels, by valuing, and exploiting, the characteristics of the Coratina cultivar.

This has been recognized and certified by several Italian and International awards.
