You can use our Early Harvest Natural Extra Virgin Olive Oil products, which were pressed in the first week of October 2024, with their low acidity, high polyphenol value, and intense fruity aroma in your hot and cold dishes, salads, and fried foods; you can even consume them raw.

How Do We Produce?

As the Heart of the Aegean, we carefully clean our olives the day they are picked and send them to the pressing process on the same day. We carry out the pressing process at room temperature, 26°. During all these processes, we do not add water and leave the production process to its natural flow.

So, how do all these processes proceed?

The olives collected from the olive trees that have always been generous to the people of this land for thousands of years are carefully selected and separated from the bottom olives and come to the oil mill, that is, to its final stop where it will be transformed from olives to healing oil. Here, it is washed well and purified from everything except itself. Then, all the olives need to be broken to become dough; the olive that has broken and entered the kneading phase will have experienced its final solid state before becoming oil. The millions of tiny oil droplets that emerge during the kneading of the olives come together and begin to form our natural extra virgin olive oil .

Packaging and wrapping are very important for our olive oil to preserve its first-day excellence. That's why we fill our olive oils in first-class lacquered tins and especially dark-colored glass bottles. We minimize the relationship between our olive oil and light. Thus, as Aegean Heart, we begin the journey of "flavor from palate to heart".

Why Room Temperature? (Cold Pressed) :

The biggest reason for our production at room temperature is our desire to reach a completely natural product, as well as to share the aroma, nutritional value and taste of our product obtained by the cold pressing method , which reaches the palate from the Heart of the Aegean, with you in its most natural form.

Why do we use dark colored bottles?

Natural Extra Virgin Olive Oil is a food with a very high nutritional and aroma value. For this reason, we would like to share a few tips with you regarding the storage conditions of the product. Sunlight, other light sources and prolonged contact with air have a negative effect on the taste. For this reason, we recommend that you store the products you purchase in closed containers in environments that are not exposed to light. You will also extend the shelf life with the dark glass bottles we use.
