TASTING NOTES
Displaying an intense green colour owing to the high chlorophyll retention that early-harvest green olive picking and meticulous low-temperature milling produce, and with a medium green fruitiness, our early-harvest mountain-grove extra virgin is an oil of pronounced character.
The presence of marked bitterness and an elegant peppery finish defines an EVOO whose profile has been shaped by this year's climatic conditions — notably scarce rainfall — which have been the prevailing trend across the region during the early milling season, yielding fruit with these characteristics as a general rule.
On the nose, herbaceous and woody notes predominate, with background aromas of tomato plant and artichoke.

SUGGESTED USES
Thanks to its delicacy, this oil is at its best when used cold as a key ingredient in any preparation requiring a burst of freshness and the distinctive character that only a Picual-variety EVOO can deliver.
When applied with very gentle heat — so as not to compromise its phenolic content — it lends great personality to emulsions and finishing touches on a wide range of dishes.
Perfect for dressing green salads and finishing vegetable creams, as well as for preparing compound vinaigrettes used to dress meat carpaccios and marinades.
