We had the idea of creating a new oil, with the aim of rediscovering a flavor from other times, an "over-ripe" oil like a late harvest for wine.
Close your eyes, and when you taste it you will feel like you are biting into a black olive. An exceptional oil that will perfectly season your summer tomato salads.
This oil, blacker in appearance than the others, is our latest prestige vintage. Our ancestors harvested ripe, i.e. black, olives, pressed them and obtained an oil with an advanced ripe taste, like a well-ripened cheese.
