THE ROOTS:
The Massimo Radano Farm has its roots in a history that began in 1860, in Stella Cilento, in the heart of the ancient Cilento region, when the Radano family began producing oil with passion and dedication. Today, Massimo, the fifth generation, runs the oil mill and the farm together with his daughter Valentina, preserving and renewing ancient knowledge. For Massimo, his roots are the teachings and passion of his father and uncle, the care handed down in everyday gestures. They are memory, identity and future, what keeps us steady even when the wind changes, what allows us to grow without forgetting where we come from. Radano oil is born from this deep connection: with the land, with the family and with a tradition that continues to live on, even though in a renewed form, season after season.

THE CARE: For us, care is a constant presence that accompanies every season, every choice, every gesture made among the olive trees. The farm’s 22 hectares of olive groves are located within the Cilento National Park and are entirely certified organic; part of the production also falls under the Cilento PDO certification. Care begins first and foremost in the soil, which is nourished exclusively with organic fertilisers. It continues with pruning, carried out with care and expertise. Everything begins in the field, long before it reaches the mill. The same attention is paid at harvest time, which is carried out delicately to preserve the integrity of the fruit. The olives are transported quickly and pressed within a few hours, before fermentation processes that would alter their characteristics can begin. It is from the care taken in the field that healthy drupes are born, and it is from healthy drupes that Radano oils come to life.

THE BIRTH: The transformation of the drupe into oil is at the heart of our work. Before any processing, the (healthy) drupe is carefully observed, touched by hand, assessed for its ripeness and identified by its cultivar. The mill operates in two phases, a technology that optimises extraction while respecting the raw material. The speed of the crusher is carefully selected, the duration of the kneading is calibrated, and temperatures and processing times are monitored. Nothing is left to chance. Every choice contributes to the future oil, defining its fruity intensity, the elegance of its aromas, its bitterness and its pungency. For Massimo, it is a job that requires technique and vision, knowledge and sensitivity. Because transforming olives into oil does not simply mean extracting a product, but interpreting the fruit and accompanying it towards its most authentic form, creating an oil that is a faithful expression of the land from which it comes and the hands that guide it.

SENSORY ANALYSIS/ THE ESSENCE: It all starts with tasting: it is the only way to truly understand the characteristics of an oil and decide how to enhance them. Through tasting, we are able to go back through the production process and modify each step to obtain a different result from the previous one. It is surprising how the same batch of olives can be transformed into profoundly different oils by varying a technical detail: increasing or decreasing the speed of the crusher, a few minutes more or less of kneading, a slightly different temperature control can completely change the aroma, taste and structure of the final product. For Valentina, sensory analysis is not just a quality control measure: it is a creative tool. It allows her to read the character of the fruit, enhance it and guide it towards its most authentic expression.
