Welcome to the heart of the art and tradition of olive oil in Valderice, a charming holiday village nestled in the Sicilian hills, known for its ancient and splendid villas. 

Back in 1831, the wealthy nobility of Trapani created an epic story by building a small olive press along with a mill, marking the beginning of a tradition that has been passed down from generation to generation. The process of producing olive oil began with the care and passion that only time and dedication can forge. 

The olives, carefully picked from the lush surrounding countryside, were poured into a granite wheel, proudly pulled by a mule. The wheel, turning forcefully, ground the olives until it obtained the precious olive paste, the heart of our oil. 

The olive paste was then transferred onto woven hemp discs, the “coffe”, which absorbed the oil, ready to give its unique aroma and flavor. Through human strength, the press composed of an endless life turned, lifting and tightening the “croffe”, thus releasing the oil and water.

With patience and mastery, they waited for the oil to separate from the water, to be collected with respect and gratitude, ready to give its gifts to the world. But the story does not stop there.
