Our olive oil has a complex and expressive sensory profile. On the nose, it reveals notes of tomato plant, green apple, grass, and asparagus, with a high fruitiness score of 7 and a defect level of 0. On the palate, it shows a silky body with a sweet entry, followed by a gradually increasing and elegant bitterness, accompanied by flavors of fig tree, alloza, and artichoke. In the throat, it presents a soft, subtle, and well-balanced spiciness. Visually, the oil displays a medium-high chlorophyll tone.
