It is the fourth generation of a family of olive growers and millers who today takes care of the Gaspare
Sarullo oil mill, which extends in a hilly area, in the territory of Ribera (AG). The history of the company that
extends in a hilly area in the territory of Ribera (AG), is intertwined with the history of a family that has
been transmitting its love for the land since the early twentieth century and that today is committed to
consolidating the culture of quality EVO oil, not only through production, taking care of biodiversity,
environmental sustainability and using the most modern extraction technology, but also through training
and information. The company that takes care of all the phases of the olive-oil production chain, cultivates
about 40 hectares of family land, also according to organic farming regulations and with absolute respect
for the environment. The variety of plants grown, many of which are centuries-old, is mainly Biancolilla,
which produces a medium-light fruity oil that has received numerous awards in Italy and abroad. The mill is
equipped with two systems with a “two-phase” extraction system without adding water (Decanter Multi
Fase 8 Leopard Pieralisi) which leads to both significant water and energy savings and also environmental
protection since it does not produce vegetation water. A proreactor, the revolutionary machine for
kneading the olive paste, also allows for greater quality in less time, guaranteeing a higher content of
polyphenols.
In this way, a tastier oil is obtained, richer in polyphenols and more stable over time. All the systems
present in the company are also powered by clean energy from renewable sources: zero emissions thanks
to the photovoltaic system that produces the necessary electricity. In the premises of the ancient oil mill of
the great-grandparents, experiential ies related to oil tourism and events aimed at spreading the

DESCRIZIONE DELL’OLIO IN INGLESE
INGA D.O.P. is a monovarietal EVO olive oil from Biancoliilla, one of the most prized and elegant varieties of
Sicilian olive growing, known for its delicate and elegant aromatic profile.
It is characterized by harmonious vegetal notes: a herbaceous olive oil, with subtle notes of fresh grass,
green almond, tomato and artichoke.
On the palate it is often sweet, with a very balanced bitterness and spiciness that are never too intense,
making it a very versatile olive oil.
Thanks to its fruity, pleasantly aromatic and slightly spicy flavor, it is ideal to accompany even the simplest
dishes.
It is ideal raw, in its simplicity, on a slice of bread, on a tomato bruschetta, on a plate of raw or boiled
vegetables, in salads, with steamed vegetables and legumes, soups, vegetable cream soups and in the
preparation of mayonnaise.
Particularly suitable for seafood recipes: raw on seafood appetizers (in marinated blue fish, in tuna or
amberjack tartare), on baked and steamed fish (before serving). It is also suitable for fried fish and is a
perfect condiment for dishes such as carpaccio, white meats (roasted and browned) or on soft cheeses,
